Because of the location of its farms in the surroundings of the Güisayote Biological Reserve in western Honduras near to El Salvador and Guatemala borders.
This is considered one of the important mountainous areas in Honduras and in the world with a variety of microclimates, cloudy forests and an impressive natural wealth that makes its coffees have peculiar characteristics that make them different from other regions of Honduras.
All coffee is handpicked by local men and women who are instructed to pick only the ripe beans in the correct way. After the bean is harvested, this coffee is transported to COCAFELOL to carry out the pulping, washing and drying process.
The coffee is dried manually in solar dryers, since this system allows maintaining the temperature and environmental conditions to ensure quality for a long time.
When the coffee is at its optimum point (12%) of humidity, it goes to quality control where a cupping is carried out to check the cup profile, which has the attributes that makes it unique with fragrances and flavors of ripe and dried fruits, its vibrant acidity that makes it a highly desired exotic coffee leaving a pleasant aftertaste and a sensation of freshness on the palate of those who consume it.
