The largest coffee farm in Costa Rica, Aquiares devotes 80% of its land to growing high quality coffee and the remaining 20% to conservation. Coffee plots are interlaced with over a dozen natural springs and almost 20 kilometers in streams, all protected with buffer zones in line with our Rainforest Alliance certification. These streams form a network of natural corridors through the farm that connect the large protected forests in the two river valleys, providing a healthy environment for the local animals, birds, and plants.
All the coffee is grown at a high altitude: from 820 to 1,400 meters (2,700 to 4,600 feet) above sea level.
Esperanza is a variety unique to Aquiares, which caries not only the name, but the actual hope for tackling climate change over the next decades. With great vigour and pest resistance, inherited from it's Sarchimor parent, and elegant cup characteristics from it's Ethiopian parent; it has come to find it's own place in our farm, and in the favourite's list of our buyers.
Since Aquiares first tried an experimental batch in 2017, they have continued to evolve their knowledge of fermentation and explore the wide range of flavor profiles. at the farm, they produce Anaerobic Honeys which have bright acidity and floral notes; and Anaerobic Naturals, which have a silky body, great aromatics, and a bold, fruity complexity that has turned them into competition style coffees.
